
This easy pancake recipe is a great option for a savoury or sweet breakfast depending on topping choice. Eggs are a great source of protein, as well as being filling & nourishing. Take care if you have any excess mucus/stagnation in the body as eggs can aggravate this.
Ingredients:
1/4 cup coconut flour
4 organic eggs
1-2 tbsp milk of choice
1/2 tsp turmeric
1/4 tsp baking powder
Salt
Ghee for frying
Method:
Mix ingredients together, batter should be quite thick. Melt ghee and add a large tbsp of batter to pan. Cook until batter is bubbling, then flip and cook for 1 minute on reverse. These pancakes can be savoury or sweet. Have with cooked spinach & mushrooms, or cooked fruit & maple syrup.
