
A delicious but super easy one-pot lunch that is hearty and full of lots of different veggies & spices. Root veggies are perfect for winter as heavy and warming in nature they help ground the body. Red lentils are calming & soothing to the body & mind as well as being very nutritious. Make sure to add the ghee & spices to aid with digestion.
Ingredients:
1/2 cup rinsed red lentils
1 cup of mixed root veg - beetroot, squash, sweet potato, carrot
1 stick celery
1 small red onion
Inch of fresh ginger
1 tsp turmeric
1 tsp fennel seeds
1 tsp mustard seeds
1 tsp cumin seeds
2 cups of water
Ghee
Salt & pepper
For toppings - fresh coriander, Greek yoghurt, fresh grated ginger & toasted mixed seeds, squeeze of lemon.
Method:
Heat ghee and add fresh grated ginger, celery & red onion. Once soft add all the spices until fragrant. Then add root veg & lentils & water. Cook for 40 minutes until soft. Season with salt & pepper and add toppings of choice. This can also be served with naans/flatbreads/slice of sourdough.
